Cool Season Vegetables vs. Warm Season Vegetables

Warm season vegetables can be killed if a frost hits.

Warm Season Vegetables

  • Beans
  • Corn
  • Cucumbers
  • Eggplant
  • Gourds
  • Melons
  • Okra
  • Peppers
  • Pumpkins
  • Sweet potatoes
  • Summer squash
  • Tomatoes

These vegetables come from the hotter areas of the world like South America and Asia. You should wait until the average last frost date (around May 15th in Utah) to plant in your area.

If you are starting from seed, you can plant them in your house approximately six to eight weeks before this date to have the plants ready. Do harden them off by putting them outside for increasing time lengths over a week or two to help them adjust to the new environment.

Watch the weather forecasts at first, since you will need to add protection to these plants if freezing temperatures are expected. They will do thrive during the summer. Also make sure you know the average date for the first frost of the year, to make sure that your plants will produce their vegetables before that time.
